Shugetsu Ramen

Ehime's tsukemen specialist arrives in Bangkok via Hong Kong. 

Though born in the southern Japanese prefecture of Ehime, Shugetsu Ramen is arguably just as well known for its pioneering role in introducing tsukemen (cold ramen noodles) to Hong Kong—where it's been listed in the island's Michelin Guide (Bib Gourmand) for the last six years. Amid a clean, minimalist space, customers get to choose both noodle portion size (from 100-400 grams) and firmness for dishes like their signature tsukemen.

Following in the footsteps of recent acclaimed imports Mensho Tokyo and Menya Itto, Shugetsu has now opened in Bangkok. 

The Sukhumvit Soi 49 branch serves the same house-made noodles and flavorful broth featuring 18-month fermented soy sauce as found in the brand's 13 branches across Japan, China and Hong Kong.

Amid a clean, minimalist space, customers get to choose both noodle portion size (from 100-400 grams) and firmness for dishes like their signature tsukemen (B225). This must-try comes with the noodles served separately from a bowl of hot broth, juicy cuts of chashu (pork belly) and a soft-boiled egg.  

Also on the menu are the likes of abura soba (B195), a soup-free bowl flavored with dried, powdered fish, scallop oil and chashu, and the spicy kara miso ramen (B195). For nibbles, add some seaweed salad (B60), karaage (fried chicken, B100) or gyoza (B80).
