Spareparts
The top two stories (plus half a rooftop) of Charoenkrung hipster hangout, Foojohn building, is home to Spareparts, a new barbecue and bourbon house. Deli-Q food truck's Texas-born Caitlin Lee Chullasapya takes care of the rooftop smoke pit, where she flavors her ribs for 6-8 hours. She also smokes the delicious Sriracha-marinated chicken wings (B180) for a couple of hours before baking them inside a dry rub crust and serving them with addictive batter-coated crispy fries. Sauces and sides rotate weekly, including Kansas barbecue sauce, curry ketchup, pork jus and Sriracha coleslaw. Ribs are served as a mixed platter (B420) with pulled pork, burnt ends, chicken wings and crispy onions. The bar offers bourbon-based cocktails to go with all the smoked goodies. Try the mojito made with Evan Williams bourbon and smoked pineapple (B200).

Smack & Smoke
This cozy, rustic barbecue joint has landed not far from Khaosan Road, where the Old Town cool clique can enjoy over 100 types of craft beer and melt-in-your mouth American-style wood smoked ribs (B180/300g-B675/1.4kg). Using the dry rub method, the chefs here massage their racks of ribs with 15 different spices before giving them 12 hours to absorb the flavors. Then it’stime for 10 hours in the smoker to get even more taste from charcoal and genuine wood chips. Sample the beef ribs, pork ribs, smoked sausage and hot wings with the B1,515 combo platter.

Hickory
After setting up shop in Nana two years ago, Hickory has now moved its smoking operation to Game Over Lounge on Thonglor. Using long-bone ribs instead of baby backs, NZ-born chef Seamus Jacobs smokes the meat for 5-6 hours, available as a one-fifth of a rack (450g, B430) up to a full rack of 2.4-3kg (B1,990). Everything comes glazed in a sweet bourbon sauce. Besides that, he also smokes chicken wings (from B165/6), deep-fried and tossed in the house buffalo sauce, then served with blue cheese sauce. Smoked pork knuckle, saba fish, pulled pork and chicken also feature on the menu.
