From now until March 2024, Den Kushi Flori is putting on their winter specials, sticking to its French-Japanese culinary magic and turning up the Thai and festive flair. 
 
Hailing from Shibuya, Den Kushi Flori is a collaborative fine dining project between fine dining masters Zaiyu Hasegawa of Den (two Michelin stars) and Hiroyasu Kawate of Florilège (two Michelin stars) – specializing in Japanese and French cuisines, respectively. 
 
After setting up at the Erawan building earlier in July, the Bangkok branch has been attracting a lot of buzz from local foodies, with its unique fusion signatures, kushi skewers, and local touches.  
 
This festive season, the omakase spot is serving a three-month winter menu that leans further into Thai influences with an eccentric not to holiday dishes.
 
 
Highlights include tom kha kai, a sweet and sour Thai chicken soup with a rich and herby coconut milk broth. The restaurant uses organic Korat chicken, braised in a french style. Inside the soup sits a giant, fluffy Japanese shrimp fish ball. 
 
 
Returning customers will notice holiday twists on last season’s menu like the return of scallop skewers fused with truffles, dashi, and served alongside soy pudding on banana leaf. The effects are similar to a savory version of a warm glass of bedtime milk. 
 
 
Another comeback is the clay pot rice paired with juicy beef and gobo (a popular Japanese root plant with mild but unique flavors). The bowl is completed with Biryani sauce (kao mok gai, in Thai) giving it a sweet and tangy edge. Leftovers from this dish can be taken away in compact size rice balls.
 
The winter menu starts at B2,800 for lunch and B3,500 for dinner, and will be available until the end of March 2024. For Dec 24-25, Den Kushi Flori is doing a Christmas Special—adding two surprise dishes to the menu, and prices begin at B5,000.
 
On New Year’s Eve, the restaurant serves hot served Juwari soba marinated in miso. The 100% buckwheat noodles means that they are shorter than the ones mixed with flour. In Japanese tradition, eating this auspicious food on the 31st is believed to bring luck and Den Kushi is upping the ante with its caviar toppings, dashi broth, and chili flakes. This is also served a la carte at B800.
